I'm Deborah and today we'll be making a traditional Milanese main dish that's very simple to prepare: Chicken Cacciatore. Let's see what we'll need: • 1 2 and ½ pound chicken • A bunch of parsley • 1 clove of garlic • 1 onion • 2 carrots • 3 ribs of celery • ½ cup of olive oil • 14 oz of tinned peeled tomatoes • A sprig of rosemary • 1 cup of red wine • Salt and pepper to taste. OK, let's prepare our chicken. First of all, wash, dry and cut the chicken into pieces. Now, place the pieces in a pan of hot oil to brown off for at least 10 minutes. Now, add to the chicken the diced onion and garlic, diced carrot and celery, the rosemary, a good pinch of salt, and the pepper. Let it cook for another 15 minutes. After that add the red wine to the chicken. When it cooks off, it's time to add the tomatoes cut into pieces. Cover it up and let it simmer on a low heat for at least a half an hour. If it starts to look dry, just add a bit of broth or water as needed. After everything is cooked, add the minced parsley to finish and you're ready to serve your chicken cacciatore.
